When a headset is labelled as 7.1, it typically refers to the presence of emulated surround sound. There is only one output jack on the board. Yes, stereo headsets can be connected to 5.1 or 7.1 soundcards; however, the channel setting must be set to stereo or two speakers via software in order for this to work.
It is preferable to have 7.1 surround sound because it has slightly better sound quality, which results in more depth and precision in the sound. Of course, 7.1 channel headsets are more expensive than 5.1 channel headsets. For gaming or audio, I’d recommend a good 7.1 surround sound headset, but a 5.1 headset will suffice for most other tasks and activities.
